• Strong Work Ethic: Her drive stems from her time running two successful Christchurch businesses — Costas Souvlaki Bar (NZ's first souvlaki bar!) and Costas Taverna — alongside her husband, Dimitri. Even after losing both businesses in the 2011 earthquake, Elpi's positive nature and resilience shine through
